Peel and finely chop the onion. Heat a splash of oil in a medium-sized skillet and sauté the onion until it becomes translucent.
Add the minced meat and cook until browned. Season with pepper, salt, and 3 tablespoons of sweet soy sauce.
Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
Drain the sauerkraut, making sure it's as dry as possible. Peel the bananas and slice them.
Place the sheet of puff pastry on the parchment paper. Mix 2 tablespoons of crème fraîche with half a tablespoon of mustard and spread this over the puff pastry, leaving a small edge free and folding the edges inward.
Spread the minced meat over the puff pastry, then the drained sauerkraut.
Place the banana slices on top and finish with a handful of grated cheese.
Bake the sheet pan pie until golden brown, about 20 to 30 minutes. The exact baking time depends on the oven and the thickness of the sheet pan pie. Enjoy your meal!
