visually explain to you, on how to make pasta dough from scratch! All it takes is a little bit of time, patience and mostly
love.
We've compiled a list of ingredients you must use to make your own pasta dough below:
Ingredients for home-made pasta dough
- 300 gram Italian "00" flour or Italian 'grano duro' flour
- 3 eggs
- 1 tablespoon olive oil
Kitchen equipment needed
- Stand mixer + flat beater attachment + dough hook attachment. You can knead by hand if you don't have a stand mixer.
- Rolling pin
- Clingfilm
- Pasta maker
- Dough scraper (optional, but very handy!)

Put the Italian 00 flour into the standmixer bowl along with 3 eggs.

Mix slowly with the flat beater attachment until the mixture seems smooth. While it's mixing, drizzle about 1 tablespoon of olive oil into the mixture.

Replace the flat beater attachment with a dough hook attachment. Speed up your standmixer to the next setting. Let mix for about 5 minutes until it forms a kind of ball (see below). Check the elasticity, you can do this by feeling if the mixture is not wet. It should be kind of firm and smooth too!

Spread out a nice big sheet of clingfilm and place the dough ball on top of it.

Tightly wrap the dough ball and refrigerate for about an hour.

After an hour, remove the dough ball from your refrigerator. Sprinkle some flour on your kitchen countertop and spread the dough using your hands. Because of manual kneading, the dough will slightly warm up. Which on its own turn makes handling the dough more easily. You only have to knead for a couple of minutes.

Equally divide the dough in quarters using the
dough scraper, or any other sharp utensil.

Sprinkle some flour on the dough and
rolling pin. Flatten the dough a little bit using your rolling-pin. Try to equally spread and thin out the dough. Apply some more flour if you notice the dough sticking to your rolling-pin.

Fold the slightly flattened pasta dough inwards threefold (see picture below). Run trough the pasta maker using the biggest setting. Repeat folding the dough inwards and running it trough the pasta maker 3 times. You can make the dough thinner by decreasing the pasta maker setting back each time you put the dough trough. Do this until you've reached the desired thickness.
