Thank you, we are new in the ice cream dipping business on fact last night was our soft opening. Ice cream became virtually impossible to scoop due to hardness. From you article I was storing at to low of temp. Let see if this is correct, store ice cream at +10 F to -4 F, dipping cabinet should be set at same for consistent ice cream dipping.
