Peel all kiwis and slice 6 beautiful slices from one or more of the kiwis. Make a small incision in the kiwi slices and set aside for garnishing later. Purée 3 kiwis using a blender or immersion blender.
Slice the remaining kiwi's into tiny bits. Crumb the cookies not too finely. Its best to put them into a bag and crush them using a rolling pin, this prevents crumbs in your kitchen.
Whisk the heavy cream until stiff, stir it through the kiwi purée. Season using 3 tablespoons of sugar, the exact amount of sugar depends on the sourness of the kiwis.
Whisk the coconut cream too using a electric mixer. Pour in a layer of creamy kiwi, place bits of kiwi on top and some cookie crumbs. Add another layer of creamy kiwi, bits of kiwi and cookie crumbs.
Repeat again. Finish with a big spoonful whipped coconut cream, cookie crumbs and garnish with a slice of kiwi on the edge of the glass. Enjoy!
