Preparation – 10 minutes
Peel the red onion, cut half of it into thin rings and the other half into coarse chunks. Peel the garlic and cut it into chunks as well.
If needed, remove the cucumber seeds and slice the cucumber into (half) slices.
Cut the cherry tomatoes and olives in half. Slice the iceberg lettuce into thin strips.

Making turkey meatball pitas – 35 minutes
Cut the turkey breast into chunks. Place them in a food processor along with chunks of red onion and garlic.
Blend it shortly, then add the basil leaves. Blend again until the mixture is quite smooth.
Transfer the turkey mixture into a medium-sized bowl. Add 1 egg, some pepper and salt and a handful of breadcrumbs. Mix well until you can shape it into balls.
Roll tiny meatballs from the turkey mix. You can cook them in different ways: in an air fryer, oven, or in a pan.

For the air fryer, place the balls in a baking dish. Make sure they don’t touch each other and bake them golden and cooked all the way through at 180 degrees Celsius (350 degrees Fahrenheit) for about 10 to 15 minutes. The exact time depends on how big the meatballs are.
In a pan, cook them golden brown in a bit of olive oil.
Heat the pita breads in the oven or toaster, then cut them open. Stuff the pita breads with tzatziki, iceberg lettuce, turkey meatballs, cucumber, cherry tomatoes, red onion and black olives. Serve right away and enjoy your meal!
Can I boil turkey meatballs instead of frying them?
Yes, you can also boil turkey meatballs in broth or water. They are also great in soup as a lean version of regular soup meatballs.
How long can I store turkey meatballs?
You can store raw turkey meatballs in the fridge for up to 2 days, or freeze them for up to 3 months. Once cooked, you can store them in the fridge for up to 3 days.
