Prepare the chestnuts - 5 minutes

You can choose to roast the chestnuts yourself, or use chestnuts from a jar or can that are already peeled.

Chop the peeled chestnuts fairly finely; if the pieces are too coarse, it will be harder to form the croquettes. You can also puree them for a very smooth consistency.

Making potato croquettes with chestnuts - 35 minutes

Fill a medium pot with water and a pinch of salt and bring to a boil.

Peel the potatoes and cut them into large pieces. Cook the potatoes until soft for about 20 minutes, depending on the size of the pieces.

Meanwhile, melt 75 grams of butter in a medium frying pan and add the chopped chestnuts.

Let the chestnuts simmer on low heat for about 10 minutes until they become a bit soft.

Chop the parsley finely and stir it into the chestnuts.

Use a sieve and a large spoon to push the potatoes through the sieve until you have a smooth mash.

Add the chestnuts to the potato mash and season with pepper and salt.

Separate the eggs and stir 2 egg yolks into the potato mash, and set the egg whites aside.

Let it cool slightly and place it in a piping bag (without a nozzle).

Dust a large plate or tray with a bit of flour and form long rolls of the mash on the plates.

Cover the rolls with cling film and place them in the fridge until the mash is completely cold; this makes it easier to coat them.

Frying the potato croquettes with chestnuts - 30 minutes

Prepare a bowl with flour, a second bowl with 4 beaten egg whites, and a third bowl with breadcrumbs.

Cut the rolls of potato mash into pieces of about 4 cm.

Coat the pieces first in flour, then the egg white, and finally in the breadcrumbs. Make sure they are completely covered each time.

Repeat until all the mash is used; you can make about 40 potato croquettes with this amount.

Heat a generous amount of sunflower oil (or another neutral oil) in a heavy-bottomed pan and fry the potato croquettes until they are golden brown. This will take about 3 to 4 minutes.

Don't fry too many croquettes at once and don't overcook them. Drain on kitchen paper and serve immediately, enjoy!

Tips!

Can I freeze the potato croquettes?

You can easily freeze potato croquettes by placing them on a plate lined with baking paper after coating. Freeze briefly and then remove them from the plate. Store them in a resealable bag so you can take them out individually without having to thaw them all at once.

Which chestnuts to use for making chestnut croquettes?

You can roast the edible chestnuts yourself (or boil them) and peel them, or use peeled chestnuts. These are often available from a jar or can, or sometimes in a vacuum-sealed bag.
