Cut the eggplant into fairly thin, long slices and sprinkle them with salt. Let the eggplant sit for at least 10 minutes.
The salt will draw out the moisture of the eggplant, which will make it more flavorful.

Pat the eggplant dry with kitchen towels and heat a grill pan over high heat.
Drizzle the eggplant with olive oil and grill on both sides until grill marks appear. Make sure the eggplant is fully cooked but make sure it won't burn.

Season the eggplant with pepper and salt and repeat until all the slices are grilled.
Cut the grilled bell pepper into small pieces and make the roll-ups by starting with bell pepper, then mozzarella and finish with fresh basil.
