Pancakes are always a good idea, both with a sweet or savory topping. These apple pancakes are extra tasty autumn pancakes, you can also add a pinch of cinnamon besides vanilla if you like.

Making apple pancakes - 15 minutes

Mix the eggs with milk and vanilla sugar. Sift in the flour and stir until you have a smooth batter with a whisk.

Peel the apples, remove the core with an apple corer, and cut the apples into not too thick slices.

Heat a small knob of butter in a large frying pan and fry some of the apple slices on both sides until they start to color lightly. You can sprinkle a little sugar over the apples so they caramelize more.

Pour 1/4 of the batter over the apple slices, lower the heat to medium, and wait until the top has dried.

Carefully flip the apple pancake and cook for another 2 to 3 minutes on the other side until it is also nicely golden brown.

Repeat for the other 3 pancakes and serve with a little powdered sugar if desired, enjoy!

You can use different types of apples to make apple pancakes. Make sure the apples are not too sour, like Jonagold, Elstar, Golden Delicious, or Pink Lady.
