A vegetarian bibimbap is a delicious Korean dish with rice, crunchy vegetables, and a fried egg. A dish full of vegetables and flavor enhancers like soy sauce, sesame, and garlic.
A Korean bibimbap is usually made with beef, but this vegetarian bibimbap is made with delicious fried mushrooms. You can also choose to use tofu, preferably frying it until it's crispy to give this rice bowl extra texture.
Additionally, many types of vegetables are added to a bibimbap, so it takes some work to prepare all the vegetables separately. You can also choose to use only raw vegetables to save time and effort.

Cook the rice until done, you can do this with a rice cooker or in a pot.
Meanwhile, wash the zucchini and cut it into fairly thin slices.
Peel the carrot and cut it into strips or pieces, you can do this with a spiralizer if you like.
Wash the fresh spinach if necessary, remove the tough stems, and dry the spinach with a salad spinner.
Clean the mushrooms with a mushroom brush or a piece of kitchen paper and cut them in half.
Cut the spring onion into thin rings. Peel 3 cloves of garlic and chop them finely.

Make a simple sauce by mixing 4 tablespoons of soy sauce with 2 tablespoons of rice vinegar and 2 teaspoons of sesame oil.
Heat a splash of sunflower oil in a large frying pan and fry the mushrooms in batches until they turn golden brown.
Meanwhile, heat a splash of oil in a second frying pan and fry the zucchini for about 3 minutes. Keep it warm under aluminum foil and heat the frying pan again.
Heat a splash of oil and fry the spinach with 1 chopped garlic clove. Once the spinach has wilted, keep it warm under aluminum foil.
Add the remaining garlic to the mushrooms and fry briefly. Season the mushrooms with 2 tablespoons of soy sauce.
Meanwhile, fry 2 fried eggs, making sure the yolks are still soft.
Divide the rice into 2 bowls and place the egg in the center.
Top with the zucchini, spinach, bean sprouts, carrot, and mushrooms.
Finish with the sauce, spring onion, and sesame seeds. Enjoy!
What is in a traditional bibimbap?
A traditional bibimbap usually consists of white rice, various types of vegetables, an egg, beef (often thinly sliced; in modern versions, ground meat is used), and often Gochujang as a sauce.
What rice is used in bibimbap?
For making a traditional bibimbap, Korean rice is used (ssal), this white rice is lightly sticky and resembles Japanese sushi rice.
Outside Korea, sushi rice, jasmine rice, or basmati rice is often used.
