A surprisingly delicious vegetarian tortilla where the chipotle sauce is made from dried chipotle peppers, but you can also use jarred chipotle peppers. The orange and honey give the halloumi wraps with grilled vegetables an extra flavor explosion, making everything perfectly balanced.

You can also choose to use pickled red onion, as they pair really well with the grilled vegetables and halloumi.

Making chipotle sauce - 25 minutes

Place the dried chipotle peppers in a small bowl and pour boiling water over them until they are submerged. Cover with plastic wrap and let the peppers soften for about 15 minutes. (Save the water!)

Remove the stems and seeds from the peppers and place them in a small blender with a splash of the water.

Peeled the garlic cloves and chop them coarsely. Grate the zest of an orange.

Add the garlic, orange zest, and 6 tablespoons of honey to the blender and blend until smooth. If the sauce is too dry, add a bit of the soaking water.

Season the chipotle sauce with salt and a teaspoon of black pepper. Cut the halloumi into slices and mix it with the sauce, letting it marinate (outside the fridge) while you grill the vegetables.

Making grilled halloumi wraps with vegetables - 20 minutes

Slice half an eggplant and sprinkle with salt. Let the eggplant sit for 10 minutes to draw out moisture, enhancing its flavor.

Meanwhile, peel the red onion and slice it into thin (half) rings.

Remove the seeds from the peppers and cut them into 6 large pieces.

Slice half a zucchini into not-too-thick pieces.

Heat a grill pan over high heat and drizzle the zucchini slices and the peppers with olive oil.

Grill the vegetables until grill marks are visible, seasoning with pepper and salt and keeping the grilled vegetables warm in a medium bowl covered with aluminum foil.

Pat the eggplant dry with paper towels and drizzle it with olive oil. Grill the eggplant until grill marks are visible.

Heat a large skillet over high heat and briefly toast the tortilla wraps on both sides.

Heat the large skillet again and fry the halloumi with some of the marinade until both sides are golden brown.

Spread the grilled vegetables over the wraps, followed by the fried halloumi with the marinade, and finish with red onion. Enjoy!

Tips!

What are chipotle peppers?

Chipotle peppers are smoked and dried red jalapeño peppers. They are a mild Mexican pepper with a slightly sweet and smoky flavor.

How long can you keep halloumi?

Halloumi has a long shelf life, but once you have marinated it, you can keep it in the fridge for about 3 days.
