Peel the potatoes and cut them into pieces. Cook the potatoes in plenty of salted, boiling water.
Drain the potatoes, then briefly boil them dry. This is not absolutely necessary, but it does ensure that the mashed potatoes will be as dry as possible.
Make a smooth purée, which is best done by rubbing the potatoes through a fine sieve. Add the butter and stir immediately so that it can melt through the warm mashed potatoes.
Season the potato purée with pepper, salt and a generous pinch of nutmeg. Leave to cool a little and then stir in 2 egg yolks.
Put the potato purée in a piping bag - without the nozzle - and pipe thick logs on a large plate or dish. To prevent sticking, it is best to dust these with a little flour first.
Cover the logs of mashed potato with cling film and leave them to cool completely in the fridge.
Prepare 3 plates, one with a layer of flour, the second with beaten egg whites and the third with a generous layer of breadcrumbs.
Cut the logs of mashed potato into chunks of about 4 - 5 cm.
Roll a chunk through the flour, then through the egg white and finally through the breadcrumbs. Make sure that it is completely covered with each coating.
Repeat for the remaining mashed potato chunks and, in the meantime, heat the oil for deep-frying. Deep-fry the potato croquettes for a few minutes until golden brown.
Do not deep-fry too many croquettes at once, and do not cook them for too long. Drain them on kitchen paper and serve immediately. Enjoy!
What do potato croquettes go well with?
In principle, potato croquettes can be eaten with anything. In the Netherlands, they are traditionally served with casseroles, sweet and sour rabbit and beef stew.
How many croquettes should I allow per person?
Usually, 5 or 6 potato croquettes are served per person. You can always keep a few in reserve, for those with larger appetites.
