An easy marinade for lamb that is ready in no time. With fresh mint and garlic, you don’t need much else to make the lamb extra tasty and tender.
This simple marinade can be used for lamb fillets, lamb chops or slices of leg of lamb. The amount below is enough for about 500 grams of lamb, since you don’t need much. If you’re marinating a whole leg of lamb or a rack, you should make a lot more marinade, because the thicker meat takes longer to absorb the flavours.

Wash the mint if needed and dry it with paper towels.
Peel the garlic clove and add it along with mint leaves, coarse salt, black pepper, honey and red wine vinegar to a small blender or mortar.
Add about 3 tablespoons of olive oil and blend or grind until the mint and garlic are finely chopped.
This marinade is enough for about 500 grams of lamb. Place the marinade and the lamb in a medium bowl and mix well.
Cover with cling film and place the lamb in the fridge for at least 4 hours so the flavours can soak in well.
You can now cook the marinated lamb for a few minutes on each side in a pan or on a barbecue. Make sure the lamb is still pink inside, as fully cooked lamb can become tough.
Serve the cooked lamb with grilled green asparagus and boiled red potatoes, for example. Enjoy your meal!
