Peel and finely chop the onion and garlic cloves. Make sure your spinach is rinsed very well and then dried with a salad spinner.
Chop the pork sausages and roasted paprika into pieces and set aside. Fill the large pan with water and salt and bring to a boil.
Cook the pasta according to the package. Heat olive oil in the large skillet and saute the chopped onion and garlic for 2 minutes. Add the chopped pork sausages and saute a few minutes more.
Add the spinach, you'll probably need to add them in batches. After a few minutes, add dried oregano, roasted paprika and tomatoes. Let it simmer for a few minutes and season with pepper and salt.
Drain the pasta and serve with the tomato and spinach sauce. Crumble over some feta cheese and enjoy!
