Salmon, caper and egg salad

Combine the flavors of salmon with capers, lemon juice and egg and you're in for a treat! Recipe for one, ready in less than 15 minutes from start to end.

Salmon, caper and egg salad

Ingredients

  • 2 slices of salmon
  • 1 egg
  • 1 ripe tomato
  • 1 red onion
  • 1/2 red chilli pepper
  • 1/2 cucumber
  • olive oil
  • handful of capers
  • mixed greens
  • juice from 1/2 lemon
  • salt and pepper to taste

  • Small pan for boiling the egg

Preparing the salmon salad -- 10 minutes

POUR water in the small pan, put on high heat and let come to a boil. When the water is boiling, add in the egg and boil for about 7 minutes. 

After 7 minutes, remove the egg from the pan and pour running cold water over it. Set aside and let cool off to room temperature. FINELY slice half a cucumber in quarters, or dices; whichever you prefer.

FINELY dice 1/2 red onion, click here to see how you can dice onions like a professional. SLICE the tomato and peel the egg. Slice the egg into parts.

Putting the salmon, caper and egg salad together -- 5 minutes

You basically put the mixed greens into a nice big bowl, add tomato, cucumber and diced red onion on top. Mix it together. ADD egg slices, a handful of capers and pour on some olive oil to your liking.

Place the salmon slices on top of the salad and season with some salt and pepper. SQUEEZE the juice from 1/2 lemon over the salmon and salad.

If you want a bit more heat, chop up 1/2 a red chilli pepper and divide it over the salad. Enjoy your salmon, caper and egg salad.
