Making your own spice mixes is very easy and delicious. You can adjust the spice mixes to your own taste.

  • 1 teaspoon black peppercorns
  • half teaspoon cayenne pepper
  • 3 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 3 tablespoons paprika powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon (ground) cloves

Place a skillet over medium heat and add the black peppercorns, cumin seeds and coriander seeds. If you're using whole cloves, add them as well. Don't use any butter or oil, roasting spices is best in a dry frying pan.

Roast it briefly and then add the cayenne pepper, paprika, ground cinnamon, nutmeg and ground cloves. Roast the spice mix briefly until the fragrance is completely released.

Transfer the spices to a mortar and grind them, making sure that the peppercorns are ground more finely.
