  • 4 smoked bacon slices
  • 4 eggs
  • dash of milk
  • pepper and salt to taste
  • mayonnaise
  • fresh chives

Preparation -- 10 minutes

Preheat the oven to 200 degrees celsius or 390 degrees fahrenheit and place the bacon on a baking tray.

Place the bacon slices in the oven right away while it is still heating. This will make the bacon extra crispy. Then bake the bagels in the oven for a few minutes until the outside is crispy and the inside is warm.

Meanwhile, finely chop the chives and mix the eggs with a splash of milk and season with salt and pepper.

Finishing the bacon and egg bagel -- 10 minutes

Heat a little oil or butter in a medium frying pan and pour in the eggs. Place a lid on the baking pan and bake the omelette nicely in about 5 minutes.

Meanwhile, cut open the bagel with a bread knife and spread a thin layer of mayonnaise on the top. Divide the omelette into quarters and place it on top of the bagels. Place a crispy slice of bacon on top of each bagel and sprinkle with chives. Enjoy!
