This broccoli soup with croutons is easy to make; a delicious vegetarian soup. Ideal for lunch or as an appetiser.

You can easily make your own croutons from (stale) bread or baguette. Cut into pieces, heat oil in a frying pan and sauté until golden brown and crispy.
Peel and finely chop the onions and garlic cloves. Cut the broccoli into florets. Use the stem, too, but peel it first.
Peel the potato and cut it into small chunks.
Heat a dash of olive oil in a large saucepan and sauté the onion and garlic for a few minutes. Then add the broccoli and potato and sauté for a few minutes more.
Pour in the vegetable stock and bring to a boil. Then lower the heat and let it simmer for about 15 minutes.
The exact cooking time will depend on the size of the broccoli and potato. Use a stick blender or jug blender to purée the soup.
Season the broccoli soup with salt and pepper. Serve with crumbled feta and half a tablespoon of crème fraîche per person. Garnish with fresh chives or parsley, if desired. Enjoy your meal!
