Place the burrata in warm water so it can soften. Finely chop the chives.
Heat a small frying pan over high heat and toast the pine nuts until golden brown, without adding any oil or butter.
Remove the pine nuts from the pan and immediately sprinkle them with fine salt.
Slice the sandwich open, spread pesto on both sides and add 2 slices of raw ham per sandwich.
