Butterscotch

Butterscotch sauce is easy to make yourself, and only requires a few ingredients. A rich, creamy caramel sauce which will make your cakes and desserts even tastier.

Butterscotch is similar to caramel and is made with soft brown sugar and butter. Cream and vanilla are added to produce a luxurious smooth sauce.

The difference between caramel and butterscotch is mainly the type of sugar used. Caramel is made with white granulated sugar, while soft brown sugar is used for butterscotch.

As well as this delicious butterscotch sauce, there are also butterscotch sweets (candies). These hard sweets are usually individually wrapped.

The name butterscotch may suggest that it comes from Scotland, but it's actually English. The name comes from "scotched" or "scorched", which refers to the butter being heated.

Making butterscotch – 10 minutes

Melt the butter in a small saucepan. Once the butter is melted, add the soft brown sugar, 120ml cream and a pinch of salt.

Stir with a whisk, until smooth, and cook over medium-high heat for 4-5 minutes. Make sure the heat is not too high or the sauce will taste bitter.

Turn off the heat and add 1 teaspoon of vanilla extract.

Transfer the butterscotch sauce to a clean glass jar and let it cool completely. Serve with vanilla ice cream, or cake. Enjoy!

You can use different types of cream, but it's best to use unsweetened double (heavy) or whipping cream.
