Carpaccio sandwich

A carpaccio sandwich is a popular option for many people when going out for lunch. However, you can easily make this delicious sandwich at home, too.

My version of a carpaccio sandwich is restaurant-worthy, and made with griddled courgette, sun-dried tomatoes and an easy creamy sauce.

You can buy pre-cut beef from the supermarket or butcher for the carpaccio, or you can buy beef fillet or tenderloin and slice it wafer-thin yourself. To cut it yourself, it is best to freeze the meat first, as this way you will be able to slice it more easily and neatly.

  • 1 baguette
  • 120 grams of carpaccio
  • 4 sun-dried tomatoes in oil
  • half a courgette
  • 4 tablespoons crème fraîche
  • 1 tablespoon pine nuts
  • small handful of rocket
  • small handful of Parmesan cheese
  • olive oil
  • salt and pepper to taste
  • truffle oil

Making the carpaccio sandwich – 20 minutes

Heat a griddle pan over a high heat. Top and tail the courgette and cut it into thin slices.

Baste the courgette slices with olive oil and griddle them on both sides in the hot pan until the griddle pattern is visible. Season with salt and pepper.

Heat a small frying pan, without oil or butter, and briefly fry the pine nuts in the dry pan.

Cut 4 sun-dried tomatoes into small pieces and grate the Parmesan cheese.

Season the crème fraîche with salt, pepper and a little of the oil from the sun-dried tomatoes.

Wash the rocket, if necessary, and remove any excess water. Drizzle the rocket with a little truffle oil, salt and pepper.

Cut the baguette in half and slice open both halves (horizontally). If the baguette is very long, you can make three sandwiches from it. Spread with the seasoned crème fraîche and lay the carpaccio and griddled courgette over the top.

Season the carpaccio with salt and pepper and garnish the sandwich with pine nuts, Parmesan cheese, sun-dried tomato and rocket. Enjoy!
