Preheat your oven to 200 degrees Celsius or 392 degrees Fahrenheit. Clean and cut the cauliflower into small florets. Cut the onion into rings and set aside. Boil water in a medium-sized pan and cook the cauliflower florets for about 5 minutes.
Drain the cauliflower and let cool. Cut the (butchers) ham into strips and finely chop the chives. Grab a bowl, add in the egg and milk and whisk until smooth. Add in the cheese and whisk again until the cheese is covered with the egg and milk mixture.
Mix in one teaspoon salt, some pepper and 1/2 a tablespoon of nutmeg. Grab the baking dish and mix the cauliflower florets with the sliced potatoes, ham and onion rings. Cut the butter into smaller pieces and divide over the cauliflower dish.
Pour and divide the egg, milk and cheese mixture in the baking dish.
Put the baking dish with the cauliflower into the oven for about 35 to 40 minutes, or until golden brown and fully cooked. Enjoy!
