Peel the garlic cloves and ginger and chop them roughly.
Peel the carrot and cut it into pieces. Cut the spring onions into pieces.
Remove any excess fat and sinew from the chicken breasts and place them in a food processor along with garlic, ginger, carrot, and spring onions.
Puree the mixture and then add ground Sichuan pepper, sesame oil, soy sauce, a pinch of salt and 50 ml of chicken broth.
Puree until you get a fairly smooth mixture and set it aside.
Take a dumpling wrapper in your hand and place a generous teaspoon of the filling in the center.
If necessary, wet the edges of half of the dumpling wrapper with water.
Fold the dumpling and pleat the dough from the right and then from the left. Press firmly so the dumpling stays closed during cooking or steaming.
Dust a large plate with a little cornstarch or flour to prevent sticking. Place the folded dumpling on the plate and repeat with the remaining dumpling wrappers and filling.
You can also fold the dumplings into a pouch. For this, you just need to pinch the dumpling wrappers at the top to close them.
Now, you can cook the dumplings in plenty of boiling water, or steam them in a steaming basket or steam oven. They are cooked once they float to the surface, when using boiling water.
Serve immediately with extra spring onion, sesame seeds, and a simple dipping sauce made from soy sauce, ginger syrup, sambal, and spring onion rings. Enjoy your meal!
