  • 4 cod fillets
  • 3 apples
  • juice of 1 orange
  • handful of capers
  • 2 large pickles
  • 2 tbsp mayonnaise
  • pepper and salt
  • butter
  • mixed greens of your choice

Making the cod salad -- 15 minutes

WHISK together the orange juice with the mayonnaise and season with pepper and salt. Set the dressing aside. SLICE the pickles in very thin slices and also set aside.

If you’ve bought frozen cod, be sure to defrost them before starting with this recipe. This is a very important step: pat the cod fillets dry and sprinkle them with some salt and freshly ground white pepper.

When you don't pat the cod dry, it'll come out way too moist.

HEAT up the medium-sized skillet using a medium setting, then add a generous amount of butter to the pan. PLACE the fish fillets into the skillet.C

OOK them for about 3 to 4 minutes, depending on the thickness of the fish fillets. Since most fillets are quick to cook, a few minutes on each side will suffice.

Don’t be scared of burning the fish, let the heat do its work. Most fish will break apart when flipped over too often. WASH and cut the apples in thin julienne strips.

Mix all of the above ingredients together in a nice big bowl, and add the dressing to your liking.
