Gravatar van Russell Great recipe - fiery, creamy and zingy! Being in central Italy some of the ingredients are impossible to get and so the galangal (a spice not known to me) was replaced with fresh ginger and the lemongrass with a finely chopped slice of lemon. Perhaps because our chicken was a farmyard chicken used to running around the meat needed 35 minutes to cook through. Definitely a recipe to repeat.

Gravatar van Ohmydish Thank you so much - so great to hear! I totally understand, we live in the countryside in France and some things are hard to find - or even impossible! Our galangal came from the Netherlands (where we're from) and unfortunately, we use canned lemongrass stalks instead of fresh ones since we moved. I love farm chickens, we have ours every couple of years! Have a great weekend!
