WASH the apples and celery stalks. PEEL, core and roughly dice the apples. CUT the celery stalks into thin slices using the mandoline. If you don't have one, use a chef's knife instead.
CRUSH the walnuts, we found it easy to put the walnuts in a zip-loc bag and bashing it with something heavy like a rolling-pin. This is a good mess-free way of crushing walnuts!
In a large bowl, combine the ingredients: apples, celery, raisins and crushed walnuts. Add mayonnaise and toss to coat the salad. There is not much more to it.
Cover with some cling film and refrigerate until serving, enjoy! This crunchy apple salad goes well with fatty foods such as duck or pork. The freshness of the apples complements such dishes.
