Peel the pears using a vegetable peeler. Cut the pears into wedges and remove the cores.
Wash the little gem lettuce and squeeze the juice from half a lemon.
Add honey, white wine vinegar, lemon juice and mustard to a small bowl. Whisk while slowly pouring in the olive oil, to create a dressing.
Taste, and season the dressing with salt and pepper.
Roughly tear the little gem lettuce into pieces and arrange on a plate. Crumble the walnuts and sprinkle over the salad, along with the gorgonzola.
Heat a few tablespoons of sunflower oil in the large frying pan. Sauté the pears for a few minutes, then add to the salad. Pour the dressing over the salad and serve immediately. Enjoy your meal!
