This salad couldn't be easier. All you need to do is to core the pears and fan them out. Look for a nice large skillet to bake the pears in. Wash the little gem salad so that it's completely sand-free.
You can squeeze the lemon juice in advance if you like.
This dressing is basically just putting the ingredients together! Isn't that nice? :) Grab a small bowl and add honey, white wine vinegar and 2 deciliters of olive oil. Beat with a whisk until it's all mixed nicely together.
Add in the lemon juice and mustard and mix again. Season with salt and pepper.
Break up the little gem salad into parts and place it on a plate or into a nice big bowl. Crush the walnuts and sprinkle the crushed walnuts onto the little gem salad. Crumble the gorgonzola cheese and divide it onto the salad.
Put the skillet on medium-high fire, add in a few tablespoons of sunflower oil. When the oil gets hot enough add in the fanned pears. Bake the pears for a short while and serve lukewarm. Share half a pear each per person, or more if you want!
