Peel and finely chop the onion and garlic cloves. Remove the seeds of the bell pepper and chop into small cubes. Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit.
Chop the parsley and set aside.
Heat olive oil in a large skillet and sauté the onion and garlic for a few minutes. Add bell pepper and after another few minutes also the ground beef. Let it cook for a few minutes and then also shortly cook sauté the tomato paste.
Add tomato chunks, oregano and smoked paprika powder and season with pepper and salt. Divide the ground beef mixture into 8 equal parts and divide them over the 8 tortillas.
Roll up the tortillas and arrange them in the oven dish. Divide the grated cheese on top and bake in the oven for about 20 minutes, or until the cheese is beautiful golden brown.
Finish with fresh parsley, enjoy!
