Wash the tomato, remove the core, and cut the tomato into slices. Peel the red onion and cut it into thin half-moons. Coarsely grate the cucumber.
Wash the rocket, if necessary, and dry it with a salad spinner.
Squeeze the juice from half a lime. Cut the avocado in half, remove the stone and mash the avocado with a fork. Mix it immediately with the lime juice to prevent discolouration. Season to taste with salt and pepper.
Cut the halloumi into slices and heat the griddle pan over high heat. First, briefly griddle the buns on both sides. Spread a little olive oil over the halloumi slices, then griddle them for a few minutes on both sides, until the griddle pattern is visible.
Spread the avocado mixture on the bun bottoms. Place a few slices of tomato on top, along with a little rocket.
Season the grilled halloumi slices with salt and pepper and lay them over the rocket. Sprinkle-grated cucumber and red onion on top. Put the bun top on and serve immediately, enjoy your meal!
