Preheat the oven to a temperature of 220 degrees Celsius. Melt the butter slowly in a small saucepan.
Use a chef's knife to cut a series of parallel slits almost all the way through a potato, along its length. A handy trick to avoid cutting all the way through the potato is to rest it on a spoon. The raised edge of the spoon prevents you from cutting all the way through the potato.
Repeat this step for the remaining potatoes. Place the potatoes on a baking tray lined with baking parchment and baste with the melted butter using a silicone brush. Season the potatoes with salt and pepper.
Bake the Hasselback potatoes for 30 minutes, then baste again with melted butter and bake for another 20 minutes. The exact time depends on the type of potato.
Check whether the Hasselback potatoes are cooked by piercing them with a fork. If the fork goes in easily, the potatoes are done.
Serve the Hasselback potatoes immediately, garnished with chives or parsley, if desired. Enjoy your meal!
