Horchata de arroz is a very popular drink made from rice, available everywhere in Mexico. Easy to make with uncooked rice and cinnamon for a refreshing and creamy rice drink.
There are several types of horchata, and this horchata de arroz is based on rice, the Mexican horchata. There is also a Spanish horchata made from tiger nuts (chufa). The basic preparation method is quite similar.
The traditional Mexican horchata is made with (whole) milk, but for a lactose-free version, you can replace it with almond milk or coconut milk. For a 'healthier' option, you can substitute sugar with other sweeteners like honey or stevia.

Wash the rice until the water is clear. Place the washed rice in a medium bowl and pour in 1 liter of water.
Break 2 cinnamon sticks into pieces and add them to the rice. Cover with plastic wrap and let the uncooked rice sit for at least 4 hours, preferably overnight.

Depending on the size of your blender, you can blend the rice and water together or in parts.
Blend the rice with the water and cinnamon sticks for about 5 minutes, until the water becomes creamy.
Pour the rice water through a fine sieve; for an extra smooth rice drink, you can use cheesecloth.

Mix the rice water with sugar, milk, vanilla extract, and a pinch of salt.
Place the horchata in the refrigerator until it is nice and cold.
Serve the horchata with ice cubes, a sprinkle of cinnamon powder, and optionally a cinnamon stick, which you can use as a straw. Enjoy!
Which rice to use for making horchata?
You can use any kind of white rice, such as long-grain rice, jasmine, basmati, just as long as it is white rice.
Do I need to blend the cinnamon sticks?
You can take the cinnamon sticks out of the water and not blend them, but then the horchata will only have a hint of cinnamon flavor, which is a shame.
How long can I keep horchata?
You can keep horchata in the refrigerator for up to 3 days. You can also freeze horchata; it will last about 3 months.
