Making your own Sazón spice mix is very easy and you can do it with spices you probably already have in your cupboard. This delicious spice mix is used in many popular Latin American dishes.
This is a basic recipe for homemade Sazón seasoning, sometimes black pepper is also added. For the original spice mix, you use annatto (achiote), but you can also replace this with turmeric (and paprika powder).
Sazón spices originally come from Puerto Rico. It is also known as Sazón Goya, but Goya refers only to a brand and is not a separate type of spice mix. The Sazón Goya seasoning has added MSG, which is why many people prefer to use a different brand or make the spice mix themselves.
Use this spice mix in various Latin American dishes, such as those from Puerto Rico, Cuba, the Dominican Republic, and other parts of the Caribbean and South America.

If all the spices you use are already ground, you do not need a mortar or coffee grinder to grind them yourself.
If you're not using annatto, you can completely replace it with turmeric or you can replace half of the turmeric with paprika powder.
Now create the spice mix combination of turmeric and paprika powder to make sure the color becomes more orange, just like the color of annatto.

What is annatto?
Annatto is a dye made from the seeds of the achiote tree. The color can range from a warm yellow/orange to a red hue.
It is also known by other names, such as: Koesoewe, Koeswe, and as the natural dye E160B.
Annatto is used as a coloring agent in Gouda cheese, British cheddar cheese, Mimolette cheese, and custard powder.
How to substitute annatto?
There is no exact substitute for annatto, but turmeric is most commonly used. Sometimes a combination of equal parts turmeric and paprika powder is used.
