First, make the tzatziki (you can also use ready-made tzatziki).
Fill a medium saucepan with water and a pinch of salt, or a vegetable stock cube, and bring to a boil. Cook the pearl couscous in it until it is done. The exact cooking time depends on the type of pearl couscous you use.
Remove the seeds from the red pepper and cut them into bite-sized pieces. Dice half a cucumber. Peel and finely chop half a red onion.
Drain the pearl couscous and rinse briefly with cold water to prevent it from sticking. Mix the pearl couscous with the pepper, cucumber and red onion.
Make the kofta, or mince kebabs with herbs and pine nuts.
Wash the lettuce, if necessary, and slice it into strips. Season the lettuce with a little lemon juice, olive oil, pepper and salt.
Finely chop a small handful of fresh mint and stir it into the pearl couscous. Season the pearl couscous salad with pepper and salt and finish with crumbled feta and tzatziki. Garnish with fresh parsley, if desired. Enjoy!
What is pearl couscous made of?
Pearl couscous is made from coarsely ground durum wheat.
Can you replace pearl couscous with ordinary couscous?
Yes, you can. The preparation method is slightly different. You have to fully cook the pearl couscous before using, whereas couscous can be steeped in boiling water until it is ready. Couscous absorbs the moisture completely and is then ready for use immediately.

Pearl couscous is available at specialist grocers and online, but also, increasingly, at larger supermarkets.
