For these Mexican wraps, you can use whole (dried) chipotle peppers, which are often sold at Asian stores, or use canned chipotle peppers. These jarred peppers are typically in an adobo sauce and are available in most supermarkets.
Canned black beans are the easiest option, but you can also cook dried black beans yourself. Keep in mind that dried beans triple in size when cooked, so for 400 grams of cooked black beans, use about 140 grams of dried beans.

If you're using dried chipotle: place the dried pepper in a small bowl and pour boiling water over it. Let it sit for at least 15 minutes.
Peel and finely chop the onion and garlic. Drain the tin of black beans.
Heat a splash of sunflower oil in a large frying pan and sauté the onion and garlic for a few minutes until the onion becomes translucent.
Add ground beef and cook until browned, which will take about 5 minutes. Add half a can of diced tomatoes along with 400 grams of black beans and let it simmer for about 10 minutes on medium heat.
If you want a milder version, remove the seeds from the chipotle pepper and chop it as finely as possible. Add the pepper along with 1 teaspoon of cumin.
Season the beef with salt and pepper.
Serve the spicy beef on a tortilla of your choice and top with avocado, grated cheese, sour cream, fresh cilantro, and lime wedges. Enjoy your meal!
