Rinse the bok choy and spring onion thoroughly. Cut the bok choy into fairly coarse pieces, cut the spring onion into rings. If you use fresh bean sprouts, rinse them with cold water and then drain them in a colander.
Fill a medium-sized pan with a litre of water. Remove the instant noodles from the package. You can save the sachets of spice powder for another dish.
Add the noodles to the pan of water and bring to a boil. Once the water boils, lower the heat.
Add 2 - 3 tablespoons of peanut butter and stir well until all the peanut butter is absorbed into the water. Add 1 tablespoon of sesame oil and 2 teaspoons of thai red pepper paste (or sambal).
Now add the bok choy and stir everything well. As soon as you notice that the bok choy is starting to soften, add a large handful of fresh bean sprouts. Season with salt and pepper.
