- 2 ripe pears (e.g. Conference)
- 100 gram blue cheese, such as fourme d’ambert
- 1 teaspoon ground nutmeg
- 1 egg
- small handful almond shavings
- 8 filo sheets
Kitchen equipment needed
- cutting board & chef’s knife
- oven tray lined with parchment paper
- silicone kitchen brush
- medium-sized bowl
Preparation — 10 minutes
PRE-HEAT the oven to 190 degrees celsius or 375 degrees fahrenheit.
PEEL the pears and chop them into small cubes, make sure the pieces aren’t too big otherwise the filo dough won’t close nicely. CHOP the blue cheese into small pieces as well and COMBINE the chopped cheese, pears and 1 teaspoon nutmeg.
Finishing the pear and blue cheese filo pastries — 20 minutes
MELT the butter and divide the filo sheets into 2. COAT the sheets with melted butter and place 2 pieces on top of eachother. PLACE a spoonful of filling in the middle and fold the pastries inwards. PRESS them gently so they won’t open during baking.
REPEAT until all the filling and filo sheets are used and coat them with a beaten egg. DIVIDE the almond shavings on top and bake the pastries in the oven for about 10 minutes, or until golden brown. Enjoy!
