Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit. Peel the potatoes using a potato peeler and cut them in larger pieces.
Boil them for about 3 minutes in a medium-sized pan filled with water and add a pinch of salt. Drain the potato pieces in a colander and wait a few minutes.
Toss the potatoes with some garlic powder, paprika powder, chilli powder and a lot of olive oil, but not too much. It's up to you how much spices you want to add.
Season with pepper and salt and make sure it's well mixed.
Place the potatoes in a baking dish and bake them for about 20 minutes. Or until they are golden brown, crispy and well-cooked on the inside. if your oven has a grill setting, you can choose to set the oven to grill for the last few minutes for extra crisp and of course extra colour.
It's that easy and oh so delicious! You can serve these perfect roasted potatoes with home-made mayonnaise, or serve them as they are alongside any type of fish or meat you like.
You can experiment with different types of herbs. For example: try using curry powder or fresh herbs like thyme or rosemary.
