Pickled cucumbers

Sweet and sour pickled cucumbers are a deliciously fresh side dish, quick to make from only a handful of ingredients. Pickling cucumbers is ideal if you have a glut of cucumbers, for example from your vegetable garden or the market. This way, you can enjoy the tastiest cucumbers all year round.

Cucumbers are easy to pickle, so you need never run out, and will always have a delicious condiment on hand, perhaps for an Indian dish.

Pickling cucumbers is done with vinegar, sugar and salt. To avoid making the cucumbers overly sour, it is best to add some water as well. If you enjoy a bit off heat, add a chilli; it pairs perfectly with the sweet and sour cucumber.

  • 200 ml vinegar
  • 200 ml water
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 red chilli

Make sweet and sour cucumber – 10 minutes

Wash the cucumbers, top and tail, then cut the cucumbers into pieces or slices. There is no need to remove the seeds.

Remove the seeds from the red chilli and cut it into thin rings.

Finishing the sweet and sour pickled cucumbers – 15 minutes

Sterilise the jars and lids; the easiest way to do this is to boil them in water for a few minutes.

Divide the cucumber between the sterilised jars. Heat 200 ml of vinegar with 200 ml of water, 3 tablespoons of sugar and 1 teaspoon of salt, in a small saucepan until the sugar has dissolved and the mixture is very hot.

Pour the hot mixture over the cucumbers and immediately place the lids on the pots. You can store sweet and sour pickled cucumbers like these for up to a year in a cool, dark place.
