Add a thick layer of sunflower oil (or any other neutral oil) into the pan and heat it up.
Sift the flour, cornstarch and baking powder. Mix together with a pinch of salt and vanilla sugar. Add 100 ml water and stir until smooth using a whisk.
Peel the bananas and halve them. Halve them again, but lengthwise. You should end up with 4 pieces from 1 banana.
Coat the sliced bananas using the batter and deep fry them in the hot oil.
Make sure to not over-crowd the pan, this way the bananas will cook evenly. Remove from the hot oil when they are nice and golden brown, place them on the plate with a paper kitchen towel.
Lightly dust them with powdered sugar, serve immediately. Enjoy!
