Combine red port, red wine, sugar, juice and zest of a lemon in the large pan. Peel the piece of ginger and chop into large pieces and also add to the mixture. Peel the pears and remove a part of the core on the bottom.
During peeling it is recommended to place them into cold water with a little bit of lemon to prevent them from discolouring, but it's not necessary.
Create a round piece of parchment paper that fits exactly into the pan and cut a small hole in the middle.
Place the peeled pears into the wine mixture and cover with the round piece of parchment paper. Don't let it come to a boil and simmer on low heat for about 2,5 to 3 hours.
Or until the pears are softened enough, you can easily check this with a sharp small knife. Enjoy this lovely poached pears with ice cream for a perfect autumn dessert. Or even as a side dish for meat.
