Roast pumpkin vegan

This roast pumpkin has a subtle spicy flavour and is a perfect autumnal side dish. It's delicious with a hearty stew and mashed potatoes.

Roasting is a delicious way to prepare pumpkin. Perfect as a side dish, or as part of a salad.

Pumpkin is a quintessential autumn vegetable and comes in many shapes, sizes and colours. For roasting, opt for bottle gourd or red kuri squash, as you don't need to peel them.

This roasted pumpkin recipe has a subtle smoky flavour due to the inclusion of smoked paprika. If you're using sweet paprika, you can add a little chilli powder or cayenne pepper to ensure the dish still has a bit of spice.

Preparing the roast pumpkin – 30 minutes

Preheat the oven to 190 degrees Celsius.

Peel the pumpkin, if desired. With some varieties (bottle gourd, for example) this is not absolutely necessary. Remove the pumpkin seeds and cut the pumpkin into slices, but not too thick.

Sprinkle 1 teaspoon of garlic powder and 1 teaspoon of smoked paprika over the pumpkin and lay the slices on a baking tray.

Drizzle with olive oil and season with salt and pepper.

Roast the pumpkin in the oven for about 15 to 20 minutes, the exact time depends on your oven and the thickness of the pumpkin slices. Enjoy your meal!
