This recipe for corn on the cob, roasted in the oven or on the barbecue, is flavoured with a spiced butter. A side dish with minimal ingredients, but maximum flavour!

  • 2 cobs of corn, husks and silk removed
  • 60 grams of butter
  • Chilli sauce, or sambal, to taste
  • Half a lime
  • Small bunch of fresh parsley

Preparation – 5 minutes

Preheat the oven to 200 degrees Celsius.

Melt the butter in a saucepan over a low heat. Add chilli sauce, or sambal, to taste and mix together. Add the juice of half a lime.

Take a sheet of aluminium foil and place a corn cob in the centre. Rub the corn cob with the spiced butter, then wrap the foil around the corn cob. Repeat this step for the second cob of corn.

Finishing the roasted corn on the cob – 45 minutes

Bake the corn parcels in the preheated oven for 45 minutes. Garnish the cooked cobs of corn with fresh parsley. Perfect for a barbecue; enjoy your meal!

I don't have an oven, how can I cook the corn on the cob?

As well as using an oven, you can also prepare these corn cobs on a barbecue. You could even use an air fryer or a deep pan.

What's the best way to eat these corn cobs?

Let the corn on the cob cool slightly on your plate, then hold the ends with your hands and use your teeth to strip the corn kernels from the cob. You can also hold the corn cob with special corn cob holders (which can be bought online).
