Preparation - 5 minutes

Take the goat cheese out of the fridge beforehand so that it softens a bit.

Grease the madeleine mold well with butter.

Melt 100 grams of butter, you can do this in a small pan or in the microwave.

Making savory madeleines with goat cheese - 25 minutes + waiting time

Use an electric mixer to create a smooth batter, but you can also use a whisk.

Mix the eggs with honey, milk, and goat cheese until smooth.

Sift in the flour and baking powder, add this and stir again until smooth.

Add the melted butter and stir until you have a smooth batter. Put the batter in the fridge until it's completely cold; if you use a piping bag, you can put the batter in it before cooling.

Preheat the oven to 200 degrees Celsius.

Wash the sage leaves and place them in the madeleine mold.

Fill the madeleine mold three-quarters full with the batter. This is easiest with a piping bag (without a tip), but using two spoons works too.

Bake the savory madeleines until golden brown in the oven, this will take about 10 minutes. The exact baking time depends on your oven.

Let the madeleines cool slightly, then carefully remove them from the mold. These savory madeleines are delicious during drinks, enjoy!
