A strammer max is a German open sandwich which you can customise with a variety of toppings. This version has ham, cheese and a fried egg on warmed slices of bread.

Preheat the oven to a temperature of 180 degrees Celsius. Cut 2 thick slices of bread (preferably from a large loaf), or use ready sliced bread.
Spread the slices of bread with butter (allow it to come to room temperature first, if necessary).
Rinse the tomato under cold running water and cut it into slices. Halve 3-4 gherkins lengthwise.
Top both slices of bread with a large slice of ham and a slice of mild cheese. Place the open sandwiches on an oven tray and heat them in the oven until the cheese starts to melt.
Heat a dash of sunflower oil in a frying pan and crack in 2 eggs. Fry the fried eggs until done to your liking, and season with a pinch of salt and pepper.
Remove the sandwiches from the oven and place the gherkins, sliced tomato and fried eggs on top. Garnish with some dried or fresh chives, if you like.
