Watermelon and feta salad

Watermelon, feta and mint salad makes a delicious summer dish which fits in perfectly at a barbecue. Fresh, sweet and savoury at the same time, each mouthful is a delight.

Making a sweet fruit like watermelon the star of a savoury salad may not seem so unusual these days, but the addition of toasted sesame oil may be more unusual. It is definitely worth trying! If you don't like the flavour of sesame, you can leave it out; the salad will still be delicious.

To make the salad even quicker to prepare, you can use pre-cut pieces of watermelon, which are regularly available at the supermarket.

Watermelon and feta salad

  • 1 small watermelon
  • 200 grams of feta
  • 1 red onion
  • 150 grams of black olives
  • half a cucumber
  • few sprigs of fresh mint
  • 1 lime
  • 1 tablespoon of honey
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon mustard
  • 6 tablespoons of sunflower oil
  • salt and black pepper to taste

Preparation – 10 minutes

Cut the cucumber in half and remove the seeds; this is easiest to do with a spoon. Cut the cucumber into thickish slices.

Peel the red onion and cut it into thin half moons. Remove the rind and seeds from the watermelon. Cut the watermelon and feta into chunks.

Finishing the watermelon and feta salad – 10 minutes

Make a lime dressing by mixing the zest and juice of 1 lime with 1 tablespoon of honey, 1 teaspoon of toasted sesame oil and 1 teaspoon of mustard. Slowly add 6 tablespoons of sunflower oil and mix to make a smooth dressing. Season with salt and black pepper.

Mix the watermelon and feta chunks with the red onion, cucumber and olives. Only add the dressing to the salad just before you serve it. If the salad sits in the dressing for too long, the watermelon will start to break down, and the salad won't be as tasty.

Serve the salad garnished with sesame seeds and finely chopped fresh mint. Enjoy your meal!
