Who is Sinterklaas anyway?
The story of Sinterklaas goes back a long way. It has been adapted and retold many times, but its origins date back to the early years of the Common Era. The Sinterklaas celebration is based on Saint Nicholas of Myra, a bishop and patron saint who lived in what is now Turkey.
The Sinterklaas festivities we know today have evolved countless times. The modern celebration is largely based on the traditions from medieval Europe.
During the original Saint Nicholas festivities, the less fortunate would place their shoes out so that wealthier people could leave coins inside. Songs were sung, and speculaas figures were enjoyed.

Preheat the oven to 165 degrees celsius. Grease the springform cake tin with butter and line the bottom with baking parchment.
Beat 300 grams of soft butter with the sugar until smooth. Add the eggs one at a time, beating continually until smooth.
Add the self-raising flour along with one and a half tablespoons of the speculaas spice mix. Spread the batter into the greased cake tin and bake for around an hour.
The exact baking time depends on the oven. Check if the cake is cooked with a skewer; if it comes out clean, the cake is done.
