Peel the potatoes if you like and cut them into thin slices.
The thinner the potato slices, the crispier the chips will be. That's why it's best to use a mandoline or food slicer, but you can also use a potato peeler to create slices if you don't have anything else.

Place the potato slices in a bowl of water and let them sit for about 10 minutes.
Remove the slices from the water and pat them dry with a clean kitchen towel.
Use a brush to apply a very thin layer of olive oil to the potato slices and place them in a single layer in the air fryer basket. Make sure they don't overlap, and don't cook too many chips at once. Keep the remaining slices covered with the kitchen towel.
To prevent the chips from blowing around in the air fryer, you can use a splatter lid. You can also do it without, but in that case, you may need to occasionally separate the slices and shake them well after a few minutes (once they are no longer sticking together).

Bake the chips to a golden brown and crispy texture in 5 to 10 minutes at 190 degrees Celsius. The exact baking time depends on the air fryer and the thickness of the potato slices.
Sprinkle the chips with a bit of salt. Repeat with the remaining potato slices, and enjoy!
