It's best to use nice thin asparagus for these bites, there's no need to peel them. If you're using thicker asparagus, they need a little longer in the oven and it is best to peel them first.
Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit and line an oven tray with parchment paper.
Cut about 10 fairly small squares from the puff pastry, you don't want the dough to get too thick.
Season crème fraîche with salt and pepper and spread a thin layer over the squares. Divide a little bit of finely grated grana padano on top.
Cut the ham into pieces that approximately fit the squares and place them on the puff pastry. Cut the ends of the asparagus and place 3 asparagus per square.
Roll the squares fairly tight and beat an egg with a little water. Brush the puff pastry with the egg and divide a little bit of finely grated grana padano and poppy seeds on top.
Bake the asparagus bites until nice and golden brown in about 15 to 20 minutes. The exact time depends on the oven and the thickness of the asparagus and puff pastry. Serve immediately, enjoy!
