  • 100 grams of smoked bacon
  • 200 grams brie
  • 2 tablespoons honey
  • big knob of butter
  • salt and pepper to taste
  • handful of hazelnuts
  • fresh parsley for garnish

Baked Chicory With Brie

Preparation – 15 minutes

Preheat the oven to 180 degrees celsius.

Remove the outer leaves and the hard core of the chicory and cut it in half.

Heat a good knob of butter in a large frying pan and sauté the chicory until golden brown on both sides. Season the chicory with salt and pepper and drizzle with honey.

Let the chicory caramelise with the honey for a while and then transfer it to a large oven dish or baking tray.

Finishing the chicory with brie from the oven – 20 minutes

Reheat the pan and fry the bacon until crispy. Then scatter this over the chicory.

Cut the brie into slices and place on the chicory halves. Roughly chop the hazelnuts and sprinkle them over the chicory as well.

Bake the chicory with brie in the oven for about 15 minutes. The exact baking time depends on the oven, check whether the chicory is cooked and that the brie has melted.

Garnish with fresh parsley, if desired, and serve immediately. Delicious with baked potatoes and, for example, marinated chicken. Enjoy your dinner!

Can I make this baked chicory with brie vegetarian?

You can omit the bacon for this recipe, but use a little less honey as the bacon makes the dish more savoury.

You can replace the hazelnuts with walnuts, these also pair very well with chicory.
