This simple pasta with beef and green asparagus uses just a few ingredients. Thanks to the starchy cooking water, the sauce becomes creamy without adding any cream. You can add more beef if you like, but even a small amount is enough when combined with asparagus and pasta.

The warm flavour of black pepper gives the pasta extra depth. The lemon gives it a refreshing touch and the nutty asparagus and rocket salad go really well with beef and tomatoes.

Preparation – 15 minutes

Take the beef out of the fridge ahead of time. You can cut it into strips now, or after cooking.

Fill a large pan with water and some salt and bring it to a boil.

Peel and finely chop the shallot and garlic. Wash a handful of cherry tomatoes and cut them in half.

Cut the ends off the green asparagus. Wash them if needed, and cut into pieces of about 4 cm.

Wash the rocket salad and remove any excess water using a salad spinner.

Making the beef and asparagus pasta – 15 minutes

Cook the pasta al dente in the boiling water.

Meanwhile, heat a dash of olive oil in a deep frying pan. Quickly sear the beef on both sides – just until the outside is brown, but the inside is still red. Take the beef out of the pan right after searing. If you haven’t cut it into strips yet, do that now.

Add a little more olive oil to the same pan and fry the asparagus for 4 minutes. Then add the shallot and garlic, and cook until the shallot is translucent.

Add the cherry tomatoes, along with the zest and juice of 1 lemon and cook for 2 more minutes.

Add the cooked pasta to the pan along with a good splash of the pasta cooking water. The starch in the water will make the sauce creamy. Let it cook a few more minutes until the liquid has reduced.

Stir in the beef and season with black pepper and salt. Serve the beef and asparagus pasta with some rocket salad on top and finish with grated Parmesan cheese. Enjoy!

Tips!

Do I need to peel green asparagus?

Usually, there's no need to peel green asparagus unless they’re quite thick or a bit older. In that case, they can be stringy, and peeling the bottom half can help.

How does pasta become creamy without cream?

By adding a good splash of the pasta’s cooking water to the sauce. The starch in the water helps the sauce become creamy without needing to add any (heavy) cream.
