This beetroot salad, with apple and feta, is wonderfully fresh and savoury. It's a perfect side dish for a barbecue, or enjoy it for lunch.

  • 500 grams of red beetroot
  • 1 apple
  • 100 grams of feta
  • handful of walnuts
  • 1 teaspoon mustard
  • 30 ml red wine vinegar
  • about 90 ml sunflower oil
  • salt and pepper to taste
  • optional: a handful of fresh dill

Preparation – 10 minutes

Make a dressing by combining the mustard with the vinegar in a medium bowl. Gradually add sunflower oil and beat with a whisk until smooth, then season with salt and pepper.

Cut the beetroot into slices or cubes and stir through the dressing.

Finishing beetroot, apple and feta salad – 10 minutes

Remove the core from the apple and cut it into bite-sized pieces. Immediately stir the apple into the dressing to prevent it from discolouring.

Crumble the feta and walnuts through the salad. Season the salad with salt and pepper and dress it with a little fresh dill, if desired. Enjoy your meal!

You can use pre-cooked beetroot for this, or you can also use fresh, raw beetroot which you will need to boil, steam or roast yourself.

Can I use other types of nuts?
